Ingredients
2 Packet instant noodles (cooked)
2-3 Eggs
½ Cup valhomas (sliced)
1-inch piece ginger, thinly sliced
2 tsp Oyster sauce and 2 tsp Soya sauce (mixed together)
1-2 Maldivian chilli (githeyo mirus)
2 Dried chilli
A few curry leaves
Salt and pepper (to taste)
6 cloves garlic, finely chopped
1 Bell pepper, sliced
½ Carrot, thinly sliced
3 tbsp cooking oil
Water
Method
Heat the oil in a pan over medium heat. Add the garlic and onion until slightly softened. Stir in the eggs and mix together.
Add in the ginger, curry leaves, pandan leaves, carrots, bell pepper, valhomas,dried chilli and saute until fragrant.
Add in the soya and oyster sauce mix and stir together.
Add a little bit of water and cooked noodles and combine well.
Add in salt, pepper and githeyo mirus and stir fry for 1-2 minutes.
To garnish the dish you can add in fried onion and fried egg with some more valhomas slices.
