Ingredients:
1 small green papaya, julienned
1 carrot, julienned
2 long beans, cut into small pieces
1 tomato, sliced
2 garlic cloves
2 Thai chillies (adjust to taste)
Juice of 3 limes
4 tbsp fish sauce
4 tbsp tamarind juice
4 tbsp palm sugar
2 tbsp crushed roasted peanuts
Fresh coriander leaves
Method
In a mortar and pestle, pound the garlic and Thai chillies until roughly crushed.
Add the long beans and lightly pound to soften them. Stir in the crushed roasted peanuts.
Add the fish sauce, tamarind juice and palm sugar. Pound and mix until the sugar dissolves and the dressing is well combined. Add in the lime juice.
In a mixing bowl, add the julienned green papaya and carrot. Pour the dressing mixture over the vegetables and toss gently to combine.
Transfer to a serving plate. Top with sliced tomatoes and fresh coriander before serving.
